Breakfast Cereal

My brother loves cereal, so I wanted to make him a vegan, gluten-free breakfast cereal that did not have any added oil.  I want to make it again without maple syrup as the dates in the cereal add plenty of sweetness, but we are taking baby steps with my bro!  This recipe can also be made raw, but will need to be stored in the fridge.

Ingredients:

2 cups rolled oats, be sure to get the "gluten-free" kind if this is important to you.

1 cup sprouted quinoa

1 cup dates

1/2 cup almonds

1/2 cup pecans

2 tbsp maple syrup (optional)

1-2 tsp cinnamon

1/2 tsp nutmeg

1/2 cloves

sea salt to taste

1/2 cup coconut flakes

1/3 cup goji berries

 

Method:

Preheat oven to 300C.  To a bowl, add oats, quinoa and spices.  Slice the dates, almonds, and pecans then add to the bowl.  Stir, then add the maple syrup and stir again.  Place parchment paper on a baking sheet and spread the cereal evenly.  Bake for 15 minutes occasionally tossing the cereal.  Remove and allow to cool.  Add the goji berries and the coconut flakes.  Enjoy with your favourite fresh fruit and nut milk.
