Rainbow Salsa

 Rainbow Salsa!  Super easy.  Raw, vegan.  

1 pepper, any colour 

1 onion, white or red

2 cups of mango and/or pineapple, frozen will do

Handful of fresh cilantro or parsley (I prefer cilantro)

A hot pepper, optional or to desired taste

Place all ingredients into a blender and blend to desired chunky-ness.  Serve with zucchini and/or cucumber circles.  Mix up the colours of the fruits and vegetables to create your own colourful salsa!  Enjoy!
